Corrective Action(s): Repair/service the glass washer. The operator called to a service company at the time of inspection. Please use the kitchen dishwasher for glasses right now.

Comments

- General sanitation satisfactory.
- Walk-in cooler at 4.0C at the time of inspection.
- Front prep cooler at 3.9C (top and bottom).
- Back prep coolers both at 4.0C.
- Upright cooler was at 2.8C.
- Bar coolers were at 3.7C.
- Kitchen upright freezer was at -16.0C.
-Storage area freezer was at -24.0C.
-Storage area chest freezers were at -18.0C.
-Hot holding > 60.0C.
Note: Reheating is done properly.
-Cooked sauces are cooled rapidly in the upright freezers, prior to cooling in the walk-in cooler. Sauces were at 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for sanitizing).
-Handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach sanitizing pails were tested at 200ppm.
-Raw meats stored below ready-to-eat foods.
-No signs of pests noted at the time of inspection.
