Observation: 1. Ice scoop edge is badly torn.
2. Tree bags of carrots stored directly on the concrete floor of storage area.
3. Spice scoops are not stored in a sanitary manner at the time of inspection. Scoops were observed stored in a white dirty bucket/among non-food items such as a dirty towel.
Corrective Action(s): 1. Ensure a durable, smooth, non-absorbent, easy-to-clean scoop is available for the ice machine.
2.Ensure that food products are not stored directly on the floor to protect food from potential contamination and to facilitate cleaning.
3. Ensure that scoops stored in a sanitary manner.

Observation: 1. A food debris observed in the spice room; and some debris in the storage area.

Observation: Chemicals/cleaning agents are not stored in a designated area. Cleaning agents stored at different locations of the facility.
Some containers/items are not labeled or labels are faded.
Corrective Action(s): Ensure that all items/cleaning agents are properly labeled to identify contents to prevent accidental mixing or misuse; as well as store it in a designated area.

Comments

Routine Inspection is conducted.
- All coolers and receiving at 4 degrees C or less.
- Walk-in freezer temperature at - 20.2 degrees C.
- Production areas at less than 10 degrees C (6.4 degrees C).
- Shipping & receiving area at < 10 degrees C.
- Loading dock doors - satisfactory (Note: No gaps at the bottom edge/just ensure that doors properly closed/).
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Three compartment sink is supplied with hot and cold running water, two sink plugs, and a chemical dispenser system with hose attachment.
- Sanitizer in dispenser (quaternary ammonium compounds (quats)).
Note: Spray surface chlorine sanitizer - available (near the handwashing station/production area) but bit high > 100 ppm.
- Ice machine was observed to be in clean condition.
Friendly reminder: Ensure that ice machine is being cleaned and sanitized as per manufacturer's directions.
- No signs of pests noted at the time of inspection.
- It was stated by the operator that temperature monitored and recorded via an electronic device.
- It was stated that food processing equipment in cold areas is taken apart, washed, rinsed, then sanitized between animal species and at the end of the day.

Recommendation:
- Paper test strips for sanitizers (Quat/Bleach) have to be available that staff can verify the required sanitizers concentration.
- Handwashing station must be easily assessable for staff all the time.
- Do not mix on one prep. counter ready to eat and raw food; as well as different kind of meat (i.e. beef/pork).
- Keep personal belongings away from a production area.
- Missing plug for 3-compartment sink must be replaced.
