Prep cooler broken - no food inside. Operator sourcing out replacement. Walk-in cooler and front display coolers all less than 4 C. Freezer around -6 C on defrost cycle. Dishwasher 77 C at plate - OK. Spray bottle for surface disinfection at or above 400 ppm - ensure proper ratio between water and Quats used an labelled on bottle. Test strips used. good. **Reviewed manual dishwashing with staff. General cleanliness is good.
