Routine inspection conducted.

Temperatures:
Coolers are maintaining 4C or below.
Freezers are functional and maintaining -18C or below.
Hot holding units are holding food at 60C or more.
Rice cookers were holding rice at 68C.
Sushi cooler was holding salmon at 3C internal temperature.
Mini cooler near the sushi counter is not in use.
NOTE: Ensure temperature logs are maintained to regularly monitor the temperatures of all coolers.

Sanitation:
Hand washing sinks are adequately equipped with hot and cold running water, liquid soap, and disposable paper towels.
Low temperature dishwasher was maintaining 50 ppm chlorine at the dish surface after the final rinse cycle.
100 ppm chlorine residual sanitizer is available in all food handling areas.
Preparation cooler in the back area (near the walk-in cooler) is not in use and has a broken door. Ice-machine in the storage room is not in use.
Storage area is clear of clutter and stainless steel racks are in use.

No pest activity noted at the time of inspection.
Screen door is in use at the back.
Staff have valid food safe level 1 certification. Valid until January 16, 2025.
