Observation (CORRECTED DURING INSPECTION): Glassware washer has no sanitizer for final rinse cycle (0ppm Iodine sanitizer detected in final rinse water). Glassware washer in use for small amount of glassware. Sanitizer bottle was empty.
Corrective Action(s): Sanitizer (iodine 12.5ppm) detected in final rinsewater after sanitizer bottle replaced. Check this daily using your test strips and train staff. Update your sanitation plan if needed.

Observation: Some food/grease noted under equipment in kitchen and under food storage shelves in dry food storage room. Large storage room is dark and needs to be organized. Some shelves in bar area require cleaning. Mechanical exhaust above cooking equipment - filters require cleaning.
Corrective Action(s): Follow a written, routine cleaning schedule that includes cleaning shelves in bar area, under equipment, and floors of storage rooms. Provide adequate lighting to facilitate cleaning and pest control monitoring. Clean mechanical exhaust filters above cooking equipment.

Coolers - are at 4 C/40F or colder with the exception of pizza drawer cooler.
The pizza prep cooler drawers were just opened and air temperature is above 4C - food temperature is at 5C. Keep drawers of pizza prep cooler closed as much as possible and check this cooler again today. As part of your food safety plan, keep temperature records.
No hot holding observed today.
No menu items with raw eggs.
Produce is washed in a clean designated food prep sink unless it is labelled as pre-washed and ready-to-eat.
Food Safety Plan - Follow BP food safety plan.
Food Safe - The operator/person in charge is to have a valid Food Safe Level 1 certificate (or equivalent) - copy provided - good.
If operator /person in charge is away, at least one person per shift is to have Food Safe (or equivalent).
Hand washing sinks have hot/cold water, liquid soap, and paper towels in dispensers with the exception of bar area hand sink.

Quats sanitizer is in labelled spray bottle - 200ppm detected - good.
Commercial dishwasher has a warm water wash cycle (50C+) and a final sanitizing rinse (50ppm chlorine detected after final rinse).

Pest control program is in place that includes monitoring for pests.
