Observation (CORRECTED DURING INSPECTION): At the time of inspection 0ppm chlorine dispensed during the final rinse cycle for the low temperature dishwasher.
Corrective Action(s): Ensure all dishes, utensils, etc. are properly washed, rinsed, then sanitized then air dried. Service technician called in. In the interim all dishes and utensils were washed in the under the counter low temperature dishwasher.

Service technician serviced the sanitizer line and now 50ppm chlorine being dispensed during the final rinse cycle. Reminder to check daily using reactionary test strips the chlorine concentration.

Observation: Lighting in the storage room with mop sink/chemical dispensing station requires improvement. At the current lighting level it is difficult to inspect for cleanliness or for any potential pest activity.
Corrective Action(s): Increase the lighting level in the storage room. Correct by June 30, 2019.
