Observation: Boxes of chicken seasoning powder and shortening left open in the chicken processing room. Non-food items and other food products were being stored on upper shelves.
Corrective Action(s): Ensure to have all food properly covered and protected from contamination at all times.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require cleaning:
- floor underneath equipment at front (i.e. coolers/hot-holding units/storage counters etc.)
- entire back storage area
- floor of walk-in cooler
Corrective Action(s): Ensure to have the above areas cleaned.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Thermometer is missing in the following units:
- Stand up cooler by the chicken prep station
- Small prep cooler by the handwashing sink at front
- Sandwich cooler in retail area
Corrective Action(s): Ensure to have thermometers placed in all refrigeration units at all times.

Comments

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below -18'C.
- 200ppm Quats available in labelled spray bottles. Automated dispenser at correct concentration.
- Traps in place. No evidence of pest activity observed.
- Washroom handsink satisfactory.

Sanitation sanitation of chicken processing room had improved. However, all areas mentioned above require cleaning.
Follow-up inspection to be conducted on Thursday, April 28, 2022.
