301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION):
1. Knives and other utensils observed stored in the equipment storage area.

2. Kebab skewers observed stored on the wall upon entrance into the kitchen. The wall is located in an area which is a high-traffic area.

Staff placed all aforementioned equipment in the dishwashing area during inspection.
Corrective Action(s):
1. Do not store equipment which is dirty. All used equipment must be cleaned and sanitized after each use to prevent contamination of food.

2. Do not store kebab skewers on the wall located upon entrance into the kitchen. Store equipment in an area which prevents contamination, away from high-traffic areas, off the floor, and away from chemicals.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer observed prepared upon start of inspection. Operator prepared sanitizer in a pail which measured at a concentration of 200 ppm chlorine concentratation, tested with a test strip.
Corrective Action(s): Prepare fresh bleach sanitizer (as per approved sanitation plan) to clean and sanitize food contact surfaces, equipment and utensils. Verify sanitizer strength with available chlorine test strips.

Observation (CORRECTED DURING INSPECTION): Two canned food items observed in the preparation cooler and walk-in cooler. Operator voluntarily discarded both food items during inspection.
Corrective Action(s): Do not store open cans of food in the cooler as this can lead to metal leaching into food. All open cans of food must be used immediately, discarded, or transferred into food grade containers to prevent potential contamination.

Observation: Rodent droppings observed in the following areas:
- On the base of and the floor around the dough mixer
- On shelves in the dry storage area (top and middle)
- In the dough preparation area (floors)
Corrective Action(s): Clean rodent droppings wearing appropriate PPE. Do not vacuum or sweep droppings. Sanitize affected areas with bleach solution (1 part bleach with 9 parts water). Contact professional pest control company to assess and apply treatment/traps as necessary. Submit pest reports to the health inspector.

Observation: General sanitation of premise requires improvement in the following areas:
- Dry flour observed on the shelves and floors in the dough preparation area
- Grease build-up observed behind and around all cooking units (floors and walls) and behind dishwashing area
- Grease/food debris build-up on cooler door handles
Corrective Action(s): Degrease, clean and sanitize aforementioned areas to remove grease and food debris build-up. Conduct regular cleaning to prevent build-up of grease and food debris and to maintain the premise in a sanitary manner.
