Well maintained & operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C.
Wiping cloth sanitizer measures 200 ppm Q. Spray sanitizers measure 200 ppm Cl and 200 ppm Q. Triple-sink sanitizer measures 200 ppm C.
Temperatures are monitored and recorded. Premises complies with the Transfat regulation. No recommendations.
