Corrective Action(s): create dirty zone vs clean zone, collect all dirty dishware in one area (ie: bus pan, mobile cart) and follow the proper 4 steps of manual dishwashing as instructed and shown on the poster.

- Hot holding units temperature at 60 degree C or above
-Chlorine in bucket measured at 100 ppm
- General sanitation is good, no sign of pest noted at the time of inspection
