Observation (CORRECTED DURING INSPECTION): During the time of inspection, handwashing station located at front serving area was in disrepair as per operator. Taps on sink not functioning properly. Handwashing sink able to dispense cold water Only
Handwashing sink available near main kitchen entrance. Staff currently using either sinks to employ handwashing.

Corrective action: Repair/ service handwashing station located at front service area immediately. Handwashing station must be able to dispense hot & cold running water at all times. Handwashing stations currently are adequately supplied with liquid soap and paper towels. Ensure staff are aware of temporary set up, operator must be repair sink.

Observation (CORRECTED DURING INSPECTION): A try of cut carrots was stored uncovered on the rack in the walk-in cooler.

Corrective action: Cover all food stored in the walk-in cooler to prevent any potential contamination. All cut vegetables are considered "Potentially hazardous food" and should be stored with a cover. (ie. Plastic wrap, lid)

General comments:
Kitchen: - Upright cooler (kitchen) at 2.9C
- Upright cooler (Hallway) at 3.1C
- Walk-in cooler at 2.1C
- All chest freezers at -18C or less.

Front service area:
- Prep cooler (top & bottom) at 4.6C.
- Display cooler at -5.2C
- Hot-holding units (2) at 72.8C & 75.9C
- Utensils (clean) stored in sanitary condition.

General:
- All coolers have a thermometers to monitor temperature.
- Chemical sanitizer buckets have 100 - 200 ppm chlorine / bleach concentration.
- Low-temperature dishwasher at 100 ppm chlorine (at final rinse)
- All food stored at least 6" off the floor.
- Kitchen hood is observed to be clean. Note that professional service is due.
- General sanitation is satisfactory.
- Washroom is equipped with hot / cold running water, liquid soap, and single-use paper towels.
- Operator has Foodsafe Level one certificate which will expire July 29, 2018. Note: Advised him to take the refresher course at, Foodsafe.ca.
- Operating permit posted on the wall by the front employee entrance door.
