Observation:
The light level in the walk-in-freezer is too low. This makes it difficult to see how dirty the area is, and it is difficult to properly clean.
Corrective Action(s):
Replace all burned out light bulbs with new ones, so the light level is at least 15 footcandles or brighter.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 2C; freezer was -21C; thermometers present; temperatures recorded daily and monitored by a company. Ensure staff are completing the "Corrective Action" section of the temperature log sheet when temperatures are NOT being met.
- Low temperature dishwasher rinse cycle had [Cl2] of 50-100ppm. Chlorine test strips present and used daily.
- Quats sanitizer in 3-compartment sink had strength of 200ppm. Quats test strips present and used daily.
- All foods stored food grade containers; covered; labelled; date coded; stored in groups; and stored 6" off the floor on shelves, racks or pallets.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. A weekly contract with a professional pest company in place.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- A equipment, food contact surfaces, and food containers are in good working order.
