Observation: REPEAT OBSERVATION: rodent droppings found in the following areas;
-under the convection oven
-behind the drawer style coolers
-floor level dry storage shelves
-in electrical panel in staff storage room
-around the ice machine
-in the ventilation equipment room behind the washroom storage area
-on the electrical boxes and wires behind the food warmers
this is not an exhaustive list
Corrective Action(s): Clean the above noted areas and sanitize using a 100 ppm chlorine bleach solution.
This must be done on a more frequent basis.

Observation: several issues;
-shredded insulation in server's water station cupboard, around the ice machine, and underneath the convection oven
-gap underneath kitchen door next to dry storage area
Corrective Action(s): Discard the shredded insulation and clean and sanitize the area. fill any entry holes present.
Install a door sweep/barrier on the kitchen door next to the dry storage area
