Observation (CORRECTED DURING INSPECTION): Soups are thawed in sink then placed in hot holding unit to warm up.
Corrective Action(s): Must reheat soups in microwave or on a burner as hot holding units do not heat up fast enough nor are they able to reach 74C.
Once soups are thawed reheat to 74C then place in hot holding unit.

Observation (CORRECTED DURING INSPECTION): Food contact surfaces are being washed with soap and water then air dried or they are sprayed with water and vinegar.
Corrective Action(s): Vinegar is not an approved sanitizer. Must use chlorine bleach or quats. Liquid chlorine is on site, use 1/2 tsp bleach per Litre water.
- Wash and sanitize equipment by washing with soap, rinse then soak for 2 mins in chlorine bleach and water (as per above).

Observation: Hand sink has the water turned off to prevent the water line from the coffee machine (was removed) from leaking
Corrective Action(s): Hand sink must have hot and cold water at all times.Have water line capped, and/or place a secondary valve to shut off just that part of the line and allow water to be used at hand sink. Use 2 compartment sink until repaired.
