General comments:
- Handsinks equipped with hot and cold running water, liquid soap and paper towel
- QUATS spray bottle and dispenser concentration measured to have 200ppm
- Three compartment sink with plugs available for manual dishwashing
- General sanitation maintained. No pest activity detected during time of inspection. Premises serviced by pest control company monthly.
- Meat slicer cleaned and sanitized every hour and deep cleaned nightly
- Sushi pH log available. No sushi rice available during time of inspection
- Hot holding units measured to be 60C or higher
- Display coolers measured to be 4C or lower
- Temperature logs available and documented twice per day
- Staff observed to be wearing hairnets and gloves
- Walk-in cooler measured to be 4C or less
- Walk-in freezer measured to be -18C or less
- Permit displayed in a visible location
