Observation (CORRECTED DURING INSPECTION): Previously cooked potatoes were stored on racks at room temperature and measured to be at 19C.
Corrective Action(s): Three trays of potatoes discarded. All potentially hazardous foods must be held at 60C or hotter, or at 4C or colder in the refrigerator.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): - Grinder stored on rack was again, found to have accumulation of old food debris.
- Many pots left unwashed overnight with food debris still remaining.
Corrective Action(s): Never leave equipment dirty overnight. All equipment must be washed and sanitized at the end of each day.

Observation (CORRECTED DURING INSPECTION): No surface sanitizer was available in kitchen at time of inspection.
Corrective Action(s): Repeat violation. Future non-compliance will result in further enforcement action.
Staff prepared 200 ppm bleach solution in bucket at time of inspection. Ensure this solution is changed every 4 hours at a minimum.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towel was available at designated handwashing station again.
Corrective Action(s): Staff supplied hand sink with paper towels at time of inspection. Hand washing station must always be properly supplied with paper towels (in designated dispenser) and liquid soap. Future non-compliance will result in further enforcement actions.

Observation: Many food items in walk-in cooler and in prep cooler were uncovered.
Corrective Action(s): As discussed during previous inspections, all food must be stored properly covered. Future non-compliance will result in further enforcement actions.

Observation: An old dead mouse was found in the corner of the dry storage room.
Corrective Action(s): Dead mouse was removed at time of inspection. Clean and sanitize floors of dry storage room with bleach solution.

Observation: - Ventilation canopy baffles require cleaning.
- Floors underneath and behind all cooking equipment require deep cleaning
- Sides of cooking equipment (such as deep fryer) require deep cleaning.
- Walls require cleaning
- Floors in dry storage room require deep cleaning
- Interiors of all coolers require cleaning
- Top of dishwasher requires cleaning
Corrective Action(s): Clean and sanitize all areas noted above. This must be done on a weekly basis.
