Code 302 noted on Routine inspection # 227206 of Jul-22-2016
Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (1) Sanitizer solution on front counter was at 50 ppm chlorine. Ensure sanitizer is 100 - 200 ppm chlorine at all times and change the solution more regularly.
Corrected: New sanitizer bucket solution made, tested at 200 ppm.
2) Reviewed manual dishwashing with operator, he stated they do not do a sanitizing step, only wash and rinse. Proper dishwashing must be done with all steps being done with wash-->rinse-->sanitize with bleach and water for at least two minutes. Follow the sign posted.

-reviewed Manual Wash method with operator: wash-rinse-sanitize >100ppm chlorine = 1/2 teaspoon bleach + 1 liter water -ensure all foodworkers are implementing this method when warewashing
-handwash sink well stocked and practical to use
-bulk candy -all containers have tongs
-tested sanitizer bucket: >100ppm bleach as per test strips
