Observation (CORRECTED DURING INSPECTION): 0 ppm QUAT sanitizer was measured in the spray bottle located near the handsink.
Corrective Action(s): Staff setup 200 ppm Quaternary ammonium compounds sanitizer inside this spray bottle during the inspection. Ensure 200 ppm QUATS sanitizer is available to sanitize equipment and prep. surfaces. Monitor the concentration of QUAT sanitizer regularly using the chemical test strips on-site.

Observation: 1. Hot water knob was missing from second faucet for the third compartment sink unit.

2. Staff informed they have been manually holding the overhead sprayer to fill up the third compartment sink unit with QUATS sanitizer.
.
3. Second vegetable chopper had a broken blade. This vegetable chopper is not used on-site according to staff, however he stated he would check with the Operator prior to removing it from the food premises.
Corrective Action(s): 1. Repair or replace the hot water knob/handle for the second faucet at the 3-compartment sink unit; Correct as soon as possible within 2 weeks. Note: Hot running water was accessible from the overhead sprayer at the third compartment sink unit and directly from the tap for the first and second compartment sinks. Ensure hot running water continues to be accessible in all three compartments for manual ware-washing.

2. Obtain the part to enable the overhead sprayer to automatically fill up the third compartment sink unit without it being required to be manually held by staff for the entire duration of the water filling activity; Correct as soon as possible within 2 weeks and contact the district Environmental Health Officer for a follow up inspection.

3. Remove the vegetable chopper with the broken blade from the food premises and discontinue storing it in the equipment storage area. Staff re-located the broken vegetable chopper from the equipment storage shelf to the floor near the staff washroom.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
200 ppm QUATS sanitizer was available inside the other two spray bottles.
QUAT test strips were available on-site.
Faucet for the first and second compartment sink units at the 3-compartment sink was supplied with hot and cold running water. Sink plugs were available. Ware-washing was not occurring at the time of inspection. Manual wash, rinse, sanitize, and air dry method was reviewed.
Walk-in-cooler, under-the-counter cooler, prep. cooler, front beverage cooler, and upright drinks cooler in the back were at or below 4 degrees C.
Upright double-door freezer temperature was satisfactory.
No signs of recent pest activity were evident at the time of inspection.
Vegetable chopper used on-site was observed in the ware-washing sink at the time of inspection.
