Routine inspection due to ownership change:
- Coolers 4C or colder; freezers -14C or colder;
hot holding units above 60C. thermometers present; and temps recorded daily.
- High temp dishwasher had rinse temp of 74C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked w/liquid soap, paper towels, and running hot + cold water.
- Quats sanitizer in cloth buckets and spray bottles hot + cold water
- All foods stored in food grade containers; covered; dated coded; labelled; food stored in groups w/raw proteins separate from RTE foods; and foods stored 6" off the floor.
- No expired foods in use of for sale: FIFO being followed
- General sanitation level is excellent
- No signs of pests
- All equipment in food working order.
- FoodSafe certified staff present
- Cheque for permit fees provided (cheque #1172).
1) Ensure dipper well faucet is turned on and remains on at all times.
2) Record temp of reheated foods, to ensure it reaches 74C prior to lowering temp to hot holding (60C)
3) Call professional exhaust hood cleaning company to clean the exhaust hood system this month.
4) Remove the ice machine from the store as it is not being used or is broken.
