Observation (CORRECTED DURING INSPECTION): Dairy products (4L milk jugs/whipped creams) had internal temperature measured at 8.7'C-9.1'C. The unit was under the defrosting cycle had the ambient air temperature measured at 12.1'C. All dairy products were moved to the front coolers at the time of the inspection.
Corrective Action(s): Do not store any potentially hazardous food (i.e. dairy products/cut fruits) in this unit until it operates at 4'C or below. If the temperature does not fall back down to 4'C or below after defrosting cycle is complete, call the technician to have the unit repaired.

Routine inspection conducted:

- Handwash station adequately supplied with hot/cold running water, liquid soap and paper towels.
- Coolers operating at/below 4'C, except mentioned above; Freezers operating at/below -18'C.
- Thermometers available for temperature monitoring.
- 200ppm chlorine solution available in a labelled spray bottle. 200ppm Quats also available on site.
- High temperature dishwasher achieved 74.7'C at the plate level after final rinse.
- No evidence of pest activity observed.
- General sanitation level satisfactory.

Follow-up inspection to be conducted once the cooler is repaired and operating at/below 4'C. Until then, the unit must not be used to store cold potentially hazardous food as discussed and agreed by the operator on phone at the end of the inspection. It is the operator's responsibility to contact the health inspector to notify about the cooler repair.
