Observation: 1) Liquid soap was missing from both hand wash stations
2) Knives were stored in hand sink in the repackaging room
Corrective Action(s): 1) Hand washing stations must be supplied with liquid soap (and paper towels and hot running water) at all times. Refill soap dispensers today. Use available dish soap in the meantime until new liquid hand soap has been purchased.
2) Hand sinks must only be used for hand washing. Do not use to store dirty dishes. Utensils are only to be washed using the three compartment sink in the meat cutting area.

Observation: Rodent droppings were present on floors under pallets in the warehouse storage area.
Corrective Action(s): Remove all droppings and sanitize floors of entire warehouse with bleach solution. Keep all food off the floor and away from walls. Have pest control company come in and assess facility for possible entry points. Check packaging of food products and discard any packages that have been chewed through.

Observation: Gaps present under doors between store and warehouse.

- Hand sinks supplied with hot running water and paper towels
- Quat sanitizer available at 200 ppm from dispenser and in spray bottle
- Freezers were at or below -18C
- Coolers were at or below 4C
- Food storage organized, general sanitation in store satisfactory
- Meat cutting machines maintained in sanitary conditions; reminder to wash and sanitize all parts every 4 hours at a minimum
- All food products labelled
- Pest control in place, however pest problem in warehouse has not been resolved.
