Observation (CORRECTED DURING INSPECTION): One container of Bush Brand Orange Red food colouring observed on dry storage shelf on site during inspection. Staff removed the container of food coloring from the shelf to be discarded/and or returned to the supplier
Corrective Action(s): Do not purchase Bush Brand Orange Red food colouring. Bush Brand Orange Red food colouring is not approved for human consumption as it contains a non-permitted ingredient (INS 122). Ensure to purchase food colourings which are from an approved source and which contain Canadian permitted ingredients.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. High-temperature dishwasher measured at maximum 67'C at plate surface with probe thermometer after multiple cycles. At the end of the inspection, the high-temperature dishwasher measured at maximum of 71'C. Staff contacted repair company during inspection.

2. Bleach sanitizer in spray bottles (X2) measured at >>200 ppm chlorine concentration with test strip. Staff diluted the sanitizer solutions during inspection which measured at 200 ppm chlorine concentration with test strip.
Corrective Action(s):
1. Repair dishwasher guage to ensure staff are able to monitor the rinse temperature of the water at the manifold (minimum of 82'C). Use the two-compartment sink to wash and sanitize dishes if the dishwasher is not repaired. Serve customers in single-use containers with single-use utensils ONLY if the dishwasher is not functioning.

2. Prepare bleach sanitizer at a concentration of 100-200 ppm chlorine concentration to adequately sanitize all utensils and food contact surfaces throughout the day. Obtain chlorine test strips to check sanitizer strength (as per approved sanitation plan).

Observation:
1. Rodent droppings observed in the kitchen in the following areas: next to dry storage shelves, next to and on bottom shelf of the dough mixer. Staff stated that a pest control company is contracted for monthly inspections.

2. Few drain flies observed throughout the premise. Some pooling water also observed in the dishwashing area.
Corrective Action(s): 1. Clean to remove rodent droppings from aforementioned areas. Sanitize all affected areas with chlorine sanitizer. Keep all containers of food and equipment off the floor to monitor any new rodent activity. Contact pest control company to assess and apply treatment/traps as necessary. Submit reports to the health inspector for review for the next two months.

2. Contact pest control company to assess drain flies and apply treatment as necessary. Keep all food covered to prevent potential contamination of food.

Observation (CORRECTED DURING INSPECTION): Back door observed propped open. Staff closed the back door during inspection.
Corrective Action(s): Keep all windows and closed to prevent pest (e.g rodent and fly) entry, harbourage and breeding on site. Install a screen door which prevents pest entry on site if it is preferred to leave the door open.

Observation (CORRECTED DURING INSPECTION): Two unlabelled bottles observed storing bleach solution on site. Staff labelled the bottles of bleach "sanitizer" during inspection.
Corrective Action(s): Store all chemicals in labelled bottles to prevent chemical contamination of food and to ensure sanitizer is easily distinguishable to use for sanitizing food contact surfaces throughout the day.

Observations:
- Walk-in cooler at 2'C
- 2-door freezer at -20'C
- Sandwich cooler in kitchen measured at 4'C (top and bottom)
- Hot-holding units measured at or above 60'C
- General sanitation is satisfactory (Except for above noted violations)
- All hand washing stations are unobstructed and adequately supplied with hot and cold running water, liquid soap and paper towel
- 2-compartment sink available with drain plugs and bleach
- Ice machine and ventilation canopy observed in a sanitary condition
- All food observed covered and stored at least 6 inches off the floor
- Raw meat stored away from ready-to-eat foods
- FOODSAFE Level 1 trained staff available on site (EXP: Mar 31, 2024)
- Permit posted in a conspicuous location on site

*Reminders:
- Maintain a temperature log for all coolers and hot-holding units
- Place a sign in front of the hot-holding unit which is used to hold potentially hazardous food. Sign should read "for display only"
- Obtain chlorine test strips to monitor and verify sanitizer solution at least daily

- Follow-up inspection to be conducted on July 11, 2023 in regards to dishwasher and any outstanding violations.
