Observation: Few food items were uncovered in coolers (prep. and storage) at the time of inspection.
Microwave cavity paint is destroyed. Observed rust in the cavity and big loose paint pieces hanging from ceiling and sides.
Corrective Action(s): All food must be properly covered.
Immediately. Stop using the microwave. Repair or replace the microwave that are damaged/has loose paint.

Observation (CORRECTED DURING INSPECTION): Two turkeys being thawed at room temperature in the green plastic shopping container on the floor front of the walk-in cooler.
Turkeys are partially soft at the time of inspection.
Corrective Action(s): Immediately. Turkey must be thawed as per your Food Safety Plan (safely).

Observation: Grease build up and food derbies observed between a deep fryer and stove (on walls of the equipment and a stand table).

General:
All hand sinks supplied with liquid soap, paper towels, hot/cold running water.
General sanitation - satisfactory but required attention at the cooking line (see violations).
Thermometers for cold units - available.
Storage - satisfactory.


Front Service Area:
Pie cooler at 3C.
Upright domestic cold unit: freezer: satisfactory and cooler at 3.4C.
Surface sanitizer/Quat spray at 200 ppm.

Kitchen:
Walk in cooler at 3.1C.
Walk in freezer - satisfactory.
All other coolers (prep.) = < 4 C.
Freezers at -18C or less.
Surface sanitizer in rag bucket at 100 ppm chlorine.
2 compartment sink - satisfactory.
Low temperature dishwasher at 50ppm chlorine residual.
