All coolers registered at or below 4 degree C
All freezers registered at or below -18 degree C
Vegetable soup hot held at internal temperature registering at 83C
Ground beef hot held at internal temperature registering at 64C
Chicken noodle soup was in the process of cooling down.
Temperature of soup registered at 66C. Discussed with staff regarding appropriate cool down method.
(Cool from 60C to 20C in 2 hours and 20C to 4C with in 4 hours)
Hand washing station available and supplied with hot and cold water, liquid soap and paper towel.
Bleach sanitizer available with wiping cloth inside solution. Bleach concentration registered at 100 ppm.
Reminder: Ensure bleach solution is replenished to maintain 100 ppm concentration.
High temp dish washer available for mechanical ware washing
Temperature registered at 74.4C at plate surface during final rinse cycle.
Chemical storage is separate from food prep.
