Liquid soap and paper towels are available at hand sinks. ** Do not dry hands with cloth towels. **
Coolers- front small domestic cooler 4 C, large glass door cooler 6 C (food temperature lower at <4 C/ air temperature went down to 3.9C) - ok; both coolers in main cooking kitchen are at <4 C.
Hot holding - chili and soup are both at 60 C or hotter.
Cooling hot foods - this is being done using a cold water bath once the food temperature is below 60 C.
Cooling criteria for hot foods (such as soups, chili, hot potatoes, etc.) is 60 - 20 C in 2 hours or less and 20 - 4 C in 4 hours or less.
Premises is being kept clean and organized.
Chlorine sanitizer is in labelled spray bottle (>400ppm chlorine). Make fresh solution (200ppm required fresh daily - Use 1 tsp domestic bleach in 1 liter water).
Dishwasher has a hot water final sanitizing rinse.
