Observation (CORRECTED DURING INSPECTION):
At the time of inspection no chlorine detected during the final rinse cycle for the bar glass washer.
At the time of inspection quats santizer used in dining area and front service area well over 400ppm in concentration.
Corrective Action(s):
All glasses and cups are to be rewashed in the kitchen high temperature dishwasher. All glasses and cups are to be washed in the kitchen high temperture dishwasher until the bar glass washer is serviced and in good working order.
Staff to follow dilution instructions for quats and to verify concentration of 200ppm using available test strips.

Ensure all food products are adequately covered to protect from contamination.
Ensure all raw shell eggs are stored below vegetables, fruits, and ready to eat foods in the walk in cooler.

Correct immediately.

Observation: At the time of inspection no chlorine detected during the final rinse cycle for the bar glass washer.
Corrective Action(s): All glasses and cups are to be rewashed in the kitchen high temperature dishwasher. All glasses and cups are to be washed in the kitchen high temperture dishwasher until the bar glass washer is serviced and in good working order. Service the bar glass washer. Correct immediately.

Note: changes made to kitchen. Installation of a new walk in cooler and freezer. Additional hand sink no longer plumbed and available for staff to use. Provide an updated floor plan.

Kithcen hand sink with liquid soap and paper towels available for use.
100ppm bleach sanitizer solution available for use in labeled spray bottles for use in the kitchen.
Dishwasher registers 72 degrees C at the plate surface during the final rinse cycle.
New walk in cooler at 3-4 degrees C.
New walk in freezer at -18 degrees C.
Preparation coolers inserts and lower sections at or below 4 degrees C.
Domestic freezers at or below -18 degrees C.
Front serving area hand sink provided with liquid soap and paper towels.
Under the counter cooler at or below 4 degrees C.
Permit posted in plain view of the public.

Reminder: monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse temperature.
