Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- Walk-in cooler = 3.1 degrees Celsius
- Walk-in freezer = -18 degrees Celsius
- Hot holding unit not in use at the time of inspection. Ensure unit is preheated to at least 60 degrees Celsius before foods that have been cooked/reheated to at least 74 degrees Celsius are placed into the unit.
- 2-compartment prep sink available.
- General food storage practices good:
All foods covered and protected from contamination.
All foods stored at least 6 inches (15 cm) off the floor.
Dry storage organized.
Bulk foods stored in pest proof containers.
- 3-compartment sink available for manual warewashihng. Drain plugs available.
- High temperature dishwasher sanitizing with 71.4 degrees Celsius at the dish level after final rinse cycle.
- Concentration of QUATs sanitiizer in spray bottles = 200 ppm.
- Ventilation canopy clean.
- Meat slicer maintained in a sanitary condition.
- General cleanliness and maintenance of facility very good.
- No signs of pest activity at the time of inspection.
- Premises well lit.
