Observation (CORRECTED DURING INSPECTION): High temperature dishwasher had a final rinse temperature of 67.9C after multiple runs. Operator contacted technician and ran the dishwasher on a longer cycle setting. Final rinse temperature tested again and registered at 75.5C (minimum 71C).

Observation (CORRECTED DURING INSPECTION): Liquid soap dispenser at the handwashing station beside dishwashing area was blocked by a UV fly trap. Operator unplugged and relocated the UV fly trap during the inspection.
Corrective Action(s): Ensure liquid soap is acessible at the handwashing stations at all times.

Observation (CORRECTED DURING INSPECTION): Health permit was not posted. Operator located permit and posted in visible location during the inspection.

Observation: 1. Food items observed to be uncovered in the walk in cooler, walk in freezer, and prep coolers.
2. Foods were stored on the ground in the walk in cooler, walk in freezer, and dry storage areas.
3. Open bags of dry food ingredients observed in dry storage. Dry storage space observed to be limited.
Corrective Action(s): 1. Cover all foods in coolers and freezer to protect from contamination.
2. Store all food products off the ground (at least 6 inches) to protect from contamination.
3. Transfer all opened bags of dry food ingredients into pest proof containers. Install additional shelving in the back area for more storage space.

Observation: 1. Food debris and grease accumulation observed behind and on the side of kitchen equipment (eg. clay oven, gas range).
2. Walk in freezer had spilled food underneath shelving.
3. Prep cooler had sauce splatter on shelving.
Corrective Action(s): Thoroughly clean and sanitize the above mentioned areas. Ensure hard to reach areas are cleaned and sanitized freuqently.

Observation: 1. Aluminum foil used to wrap the handles of skillet pan and cooking pot.
2. Purple rug used at the front of kitchen entrance. Operator removed rug at the time of inspection. *Corrected during inspection.
Corrective Action(s): 1. Do not use aluminum foil to wrap cookware handles as it cannot be easily cleaned.

Observation: Light in walk in freezer was not working.

Observation: Vegetable prep sink covered with metal sheet and used for storage (eg. containers, calculator).

Comments

- All handwashing stations stocked with hot/cold running water, liquid soap, and paper towels.
- High temperature dishwasher measured 67.9C at the final rinse. (*see violation above)
- 3 compartment sink available for manual dishwashing. Operator was able to explain proper dishwashing procedures.
- QUATS sanitizer measured 200 ppm in 3rd compartment and spray bottles.
- All coolers (walk in, prep, display) at 4C or below.
- Walk in freezer at -19C.
- Foodsafe certified employees on shift.
- No pests noted during inspection. "Kwality Pest Control" company visits monthly.

* Note: Do not remove Badam Milk bottle product label when selling to customers. All food products should be labeled.
* Note: Ensure temperature logs are maintained. Month of August was missing.
* Note: General cleaning and sanitation requires attention. Ensure floors, walls, shelving, are cleaned and sanitized frequently.
* Note: Ensure all spray bottles are labeled to prevent employee misuse.
* Note: Tighten the handsink faucet to prevent leakage.
* Note: Sanitizer test strips were expired. Replace sanitizer test strips to verify QUATS sanitizer concentration at 200ppm.
