Observation (CORRECTED DURING INSPECTION): Operator does not sanitize dishware during manual warewashing. Diagram for manual warewashing is posted above the sink.
Corrective Action(s): Discussed manual warewashing procedures with staff.
All dishware must be washed, rinsed, then sanitized (in 100 ppm chlorine solution for 2 minutes).
3rd compartment of the triple sink was filled with 100 ppm chlorine sanitizing solution.

Observation (CORRECTED DURING INSPECTION): Paper towels not available in the BOH washroom. This was quoted in the previous inspection.
BOH area h/w station missing paper towels and liquid soap.
Corrective Action(s): Install and keep stocked a paper towel dispenser in the washroom.
Ensure that all handwash stations are stocked with liquid soap and paper towels at all times.
