Observation (CORRECTED DURING INSPECTION): One knife observed to be stored in the crack between two coolers. This is not a sanitary location to store knives. This is a repeated violation.
Corrective Action(s): Clean and sanitize the aforementioned knife. Store the knife inside a clean food-grade container. Do NOT store any knives in the crack.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Foamy bleach sanitizer stored in a spray bottle measured with a concentration over 200 ppm. Staff stated the bleach sanitizer was mixed with detergent. This is a repeated violation.
Corrective Action(s): Discard and refill the spray bottle with 100-200 ppm bleach sanitizer (mix 1 teaspoon of bleach with 1 liter of water). Do not mix bleach sanitizer with detergent. Repeating this violation in the future will result Public Health ORDER and/or Violation Ticket.

Observation: Accumulation of dust and/or grease observed at following areas:
1. On the floor under the grill and deep fryer.
2. On the side panel of the grill and deep fryer.
3. Behind the sandwich coolers and under the counter cooler.
4. On the shelving units used to store plates.
Corrective Action(s): Clean the aforementioned areas. Equipment should be pulled out to clean hard to reach area. Correct by: Jan 26, 2020.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 71C at the plate level. Monitor the final rinse temperature.
- Ice machine maintained in the sanitary condition.
- No pest activities observed at the time of the inspection.
