Observation:
There is accumulated dust and food debris on the upper walls; on the ceiling air diffuser grates; on the walls and floors behind and under equipment, tables, sinks, and shelving racks; and on the legs of equipment, tables and sinks. The dust could fall into food and contaminate it and the food will attract pests.
Corrective Action(s):
Wash and scrub the mentioned areas with degreaser and/or hot soapy water, and then sanitized to remove the dust and food. Develop a regular schedule these areas shall be cleaned to prevent the accumulation of dust and food.

Observation:
Cardboard and foil are lining shelves and catch trays. Cardboard and foil are not durable or cleanable, so food will absorb into the material and attract pests.
Corrective Action(s):
Immediately stop covering surfaces with these types of materials as they are not food grade, durable, smooth, sealed or clean. If you choose to continue to use these materials to cover surfaces, then they MUST be thrown away every night and a new cardboard, foil, etc. must be place on the surface in the morning.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -15C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 77.4C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Food stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins below RTE foods; and foods stored 6" off the floor on sheles and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory, but improvement needed in the mentioned areas.
- No signs of pests.
- Valid, FoodSafe certified staff present.

ACTION
Non-food grade materials (cardboard, foil, newspaper, etc.) covering surfaces must be thrown away at the end of every day, and new materials placed on surfaces each day. If this is not done, STOP covering surfaces with non-food grade materials.
Detailed cleaning of hard to reach areas requires to be done on a regular basis. Make a schedule when these areas shall be regularly done and train staff.
It is recommended that the policy related to use by and/or sell by dates, for each food product, is posted where staff can see it. This will ensure consistency and food safety is followed.
