Observation (CORRECTED DURING INSPECTION): Potato press used last night was found to have old food debris.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use. Potato press was cleaned and sanitized at the time of inspection.

Observation: 1) Raw chicken was stored above a box of carrots.
2) Scoops were stored inside dry ingredient containers.
Corrective Action(s): 1) Raw foods must be stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Raw chicken was relocated at the time of inspection.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Do not use cut styrofoam cups and take-out container lids as scoops - cups or lids may break, physically contaminating foods.

Observation: Mould was found on the underside of the shelving units in the walk-in cooler.
Corrective Action(s): Ensure cooler unit is cleaned and sanitized on a regular basis.

Observation: Bleach sanitized pail was unlabelled at the time of inspection.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Once labels begin to fall off or fade, containers must be relabelled.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Back chest freezer was at -18C.
-Front chest freezer was at -15C.
-2-door freezer was at -8C.
-Hot potentially hazardous foods were observed cooling in bus pans. Items prepared yesterday were probed at 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine sanitizer on the dish surface (minimum 50ppm required for proper sanitizing).
-Sink plugs available for 2 compartment sink for manual warewashing.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was tested at 200ppm.
-Food items stored off the floor and covered. Sweets at the cash register area properly protected from contamination.
-Food items are now being stored in food grade containers.
-Washroom clean and well maintained.
-No signs of pests noted at the time of inspection. Fruit fly issue in the back is no longer present.
*FoodSafe Level 1 certificates issued prior to July 29, 2013 (no expiry date) expire on July 29, 2018. In order to recertify, students need to successfully complete a FoodSafe Level 1 or online refresher course (foodsafe.ca).
