Observation: Pan washer rinse temperature was 66 degC.
Corrective Action(s): The rinse temperature must be at least 71 degC at plate level (at least 180 degF at the manifold). Get the pan washer repaired. Purchase Thermolabels to monitor the temperature of the pan washer. In the mean time, wash the trays in the 3-compartment sink as discussed.

General Notes:
- Sanitizer spray bottle had 200 ppm Quats; both 3-compartment sinks are equipped with 200ppm Quats.
- Both handsinks are fully equipped
- The walk-in freezer was at -18 Degrees Celsius or lower
- All coolers were at 4 Degrees Celsius or lower
- Hot foods were held above 60 degC (chicken probed at 64 degC)
- Temperature log was being maintained.
-Orkin pest control is on a monthly contract. No concerns noted in the Deli/Bakery section.
-Manager on duty was FS Level 1 certified.
-Employees are performing Health Checks Daily.
