Follow up inspection:
-Carpet pieces were removed from the food prep/storage areas near the dough machine and were replaced with two washable rubber mats.
-Operator mentioned that they will try to obtain additional easy to clean, durable, and impermeable to moisture mats for the back area.
-Raw meat was stored on completely separate shelf from ready to eat food in the upright cooler to prevent a cross-contamination issue.
-Operator mentioned that they would purchase a second commercial refrigerator to store the raw meat in a separate cooler from ready to eat food. Reminder: Ensure this cooler is a commercial type, able to maintain a temperature of 4 degrees C or less, has enough capacity to store the food (either raw meat or ready to eat food) inside it, and is equipped with an accurate working thermometer.
