Observation: *REPEATED VIOLATION*
1. Vegetable dicer had dried up food debris build-up that could habour bacteria and can cause potential food contamination.
2. QUATS sanitizer pail was available on site. The concentration of QUATS was measured at 0ppm. Operator prepared fresh sanitizing solution and QUATS concentration was noted at 200ppm.
Corrective Action(s): 1. Ensure that any food debries is scraped off from vegetable dicer prior to washing and sanitizing the equipment.
TO BE CORRECTED BY - Immediately
2. It is recommended to prepare 200ppm QUATS sanitizer fresh everyday to minimize the risk of inadequate sanitizing food contact surfaces.

Observation: 1. Food debris/dirt build-up observed in the following areas that require your attention:
- Behind cooking line
- Under dishwashing sink and near grease trap
- Along the walls
2. Grease/oil build-up observed on the vents. Service is due in July 2022.
3. Dirt/grease build-up observed around ceiling ventilation fans.
4. Ice build-up observed in both chest freezers.
Corrective Action(s): Ensure that the above mentioned areas/equipments are properly cleaned and maintained in good sanitary condition to prevent the risk of food contamination.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Coolers were maintained at 4C or less.
- Freezers recorded at -18C or less.
- No hot holding conducted at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- 2 compartment dishwashing sink is used for manual dishwashing. Operator and staff demonstrated proper dishwashing method - wash/rinse and sanitize. 200ppm QUATS used as a sanitizer.
Do not use cloth towel to clog drain. Use proper drain plugs.
- Utensils and pans were found in good sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
