Observation (CORRECTED DURING INSPECTION):
- Red buckets with sanitizer are over stocked with wiping rags. Chlorine sanitizer measured at 25ppm in one bucket and stipped out the test strip in the other bucket - too strong.
Corrective Action(s):
- Ensure to follow correct ratio to make 100-200ppm chlorine sanitizer. Do not store too many wiping rags in a bucket as this will reduce the sanitizer strength too quickly. Replenish the sanitizer solution as needed throughout the day. Sanitizer was made again at the time of inspection. Test strips are available on site - ensure to use this to check sanitizer strength.

- All handsinks are fully equipped
- All cooler at 4C or below.
- Walk-in freezer at -15C. Chest freezer is being used for beer glasses only.
- Hot held food items measured at 60C or above.
- Hot temperature dishwasher reached 71C or above during the final rinse.
- Thermometers are equipped at every cooling units.
- No signs of pest observed at the time of inspection.
- Ventilation hood panels appeared clean.
- Overall sanitation is satisfactory.
