Observation: 1) Observed numerous double stacking of food products, particularly in the standing coolers
2) During food preparation, numerous buckets and trays of food placed on the ground
3) Dirty utensil found hanging above sink mixed in with cleaned utensils
Corrective Action(s): 1) Always place a food grade barrier or lid between stacked food products
2) Keep all foods off the floor. Large bins OK but do not put them on counter tops
3) Only put away cleaned and sanitized utensils

Kitchen hand sink supplied with liquid soap and paper towels, hot/cold running water
Customer washrooms missing paper towels. Front sinks all supplied with hand sanitizer. This is not an adequate product for a restaurant. Please remove this product
All coolers maintaining 4C or below
Please check that your thermometers are in good condition
Records are not up to date. Resume use immediately

Please clean behind the chest freezers - build up of cardboard, fallen items

Discussed holding of rice and cooked noodles with operator. Noodles and rice brought out for rushes must be limited to 2hrs then discarded
Dishwasher reached 50ppm of chlorine sanitizer.
Note: dishwasher is only used to sanitize dishes. All wares are manually washed and rinsed prior to getting run through washer. OK
I expect daily checks of your dishwasher to be written in to your monitoring logs. This means checking the concentration and writing it down (eg. 50ppm, 100ppm, etc)
