308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: A) Plywood storage cupboards not fixed or replaced as per initial inspection requirements. Wood appears to be flaking off in many areas of unit. This can potentially contaminate food.
B) Door slide to only commercial cooler not set properly, causing the door to not close properly. This will lead to unit working harder than it needs and slows temperature recovery. This creates an added risk to some key hazardous foods.
Corrective Action(s): A) These cupboards are no longer viable for use in the kitchen area and must be replaced/removed from kitchen area. Replace with appropriate unit that is smooth impervious and easily cleanable.
B) Fix the door jam as noted in initial inspection report.
Follow up inspection will be completed for this violation in 30 days.

Dishwasher at 74 C.
Hand wash facilities well equipped with liquid soap and paper towels.
Bleach solution above 200 ppm in spray bottle. Re-label bottle to indicate proper proportions of water and bleach to achieve 100 ppm. (1/2 teaspoon bleach to 750 - 1000 ml water)
Freezers ok at -18 c or colder.
grill and exhaust looks good. service due in August 2022.
Nylon cutting board purchased for use above plywood surface. OK.
