Observation (CORRECTED DURING INSPECTION): Doughs stored in a white plastic garbage bag in walk-in cooler. Operator had advised those were to be discarded. Discarded at this time.
Corrective Action(s): Ensure no garbage bag is in use to store/cover food under any circumstances.

Routine inspection conducted:

-Handwash station adequately supplied.
-Refrigeration temp within requirements.
-Temp monitoring system in place.
-Low temp dishwasher achieved >50ppm chlorine at plate level after final rinse.
-100-200ppm chlorine available in a bucket to hold wiping cloths.
-General food storage practice good, except mentioned above.
-Back storage area maintained in sanitary condition. All stored in pest proof containers.
-No evidence of pest activity observed.
-General maintenance and sanitation good!
-Washrooms satisfactory.

NOTE: Chair in food prep area to be replaced or covered with a material that can be easily washed/sanitized.
