Observation (CORRECTED DURING INSPECTION): 3 spray bottles were available in the food prep area but no sanitizer was detected in them. Manager prepared new sanitizer solution and the concentration of bleach noted at 200ppm.
Corrective Action(s): Ensure that an approved food grade sanitizer solution is present onsite during facility operation. For 100-200ppm bleach solution, it is recommended to add 1tsp bleach to 1L of water solution.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A bucket with frozen raw fish was observed at room temperature. The internal temperature of raw fish was recorded at 2.6C. Kitchen Manager was advised that thawing potentially hazardous food at room temperature is not a safe practice and can increase the risk of bacterial growth. Staff moved the raw fish back to the walk in cooler (4C).
Corrective Action(s): DO NOT THAW frozen potentially hazardous food at room temperature. Follow safe thawing practices:
1. Overnight in the cooler at a temperature of atleast 4C or less.
2. Under cold running water

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies observed in the back kitchen near garbage bin and in the storage room. Fly sticky tapes were present in both areas. Manager stated that the pest control has already been notified and are scheduled for next week.
Corrective Action(s): Please ensure that the facility is kept free of pests and rodents.
- Keep the garbage bins covered with lids to prevent their activity.

Comments

Routine inspection conducted.

- Temperature of walk in cooler recorded at 4C.
- Under counter cooler and prep cooler recorded at 4C and 2C respectively.
- Front bar cooler at 2C.
- Stand up freezer and chest freezers at or below -18C.
- Cooked hot potentially hazardous food such as curries were being cooled down in shallow dishes. Manager is aware of proper cooling process and uses probe thermometer to monitor temperature. Good.
- Small portions of sliced cucumbers, lettuce & baby carrots are kept at room temperature and used within 2 hours. Manager is aware not to exceed more than 2 hours at room temperature. Good.
- Handwash station available and has adequate supply of hot and cold running water, liquid soap and single use paper towels.
- High temp mechanical dishwasher was being used for warewashing. The temperature on dish surface during rinse cycle recorded at 72.6C.
- 2 compartment sink present and maintained in good condition.
- Equipment and utensils maintained in good sanitary condition.
- Ice machine was being cleaned & sanitized at the time of inspection (emptied out ice prior to cleaning). Good.
- Manager stated that the vents are cleaned regularly to prevent grease build up.
- Proper shelving units available in the storage room for storing food products.
- Improvement noted in terms of rodent activity.
- No signs of rodent dropping observed.
- Manager has valid FOODSAFE Level 1 certificate.

Overall, the improvement has been observed in the general facility operation.

- Education provided on proper thawing process. Please follow safe food handling practices.
