Comments

Inspection result of a follow up to assess the grease trap back up which happened in the morning hours.
The cafeteria was immediately closed by the operator.
Grease trap maintenance and cleaning technician was onsite at the time of inspection.

The cafeteria must be kept closed to the public until the following corrective actions are taken.
1. Ensure to discard all foods and beverages in the vicinity of grease trap and in areas where cleaning equipment may have come in contact. This includes any containers those are not sealed.
2. The kitchen floor and triple sink must be thoroughly cleaned and sanitized (1:10 bleach) prior to starting any utensil cleaning.
3. Clean and sanitize all utensils, pots, pan, tables and racks etc. thoroughly before using.
4. All surfaces, door knobs on fridges etc must be wiped off with 200 pmm quats or 200 ppm chlorine sanitizer

Ensure to have a written plan in place to address similar situations in the future.
The grease trap must be inspected at least every month (must be recorded on a log) and cleaned on a regular basis.
