- 200ppm QUATS sanitizer available in sanitizer buckets for food contact surfaces
- Low temperature chemical dishwasher reached 50ppm chlorine at plate surface
- Walk in cooler was 4C or lower
- Walk in freezer was -15C or lower
- Glass display cooler was 4C or lower; Bistro cooler for milk and cream was also 4C or lower
- Ice machines were in good condition; ice scoops stored in a sanitary manner
- Hot holding not in use during inspection
- Temperature logs maintained and available
- Operator has good knowledge and practices in place in regards to cleaning/sanitizing equipment and the kitchen itself
- Good hand washing procedures in place
