Observation: Found cracked, chipped and/or damaged food containers and lids. Bacterial will grow in the cracks, and there is potential for small pieces of plastic falling into food.
Corrective Action(s): Inspect all food containers and lids for damage. Discard any damaged items and replace with new ones.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There are floor tiles that are chipped/damaged in the front cooking area. Unsealed wood flooring is exposed, which is not cleanable. This will attract pests.
Corrective Action(s): Replace all damaged floor tiles so that the floor is smooth, level, durable, sealed, and cleanable.

Comments

A routine inspection was complete, the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 71.9C at the plate's surface.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle and cloth bucket had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. The exhaust canopy is clean.
- Light bulb tubes have been installed on all light fixtures in food preparation and storage areas.
- No signs of pests. Some drain/fruit flies found in downstairs dry storage area. Inform your pest control company of these, so they can eliminate them.
- FoodSafe certified staff present.
