Observation (CORRECTED DURING INSPECTION): Found meat slicer to have build up of food and grease under the blade, only surface of machine and blade have been cleaned. Machine last used 2 days ago on Monday Mar 9.
Corrective Action(s): This is a repeat violation correction order has been issued, a violation ticket may also be issued.
Must break down the entire machine to remove all food and grease using soap and water, followed by sanitizer and air drying.

Corrective Action(s): A deep and thorough cleaning is required through out the premises, including under and behind all equipment and shelving in the cooking area, as well as the entire exhaust system over the cooking area to remove and reduce the dripping from the system
