Observation (CORRECTED DURING INSPECTION): Sprouts stored on counter at 18C and pearls stored on counter at 20C, both since an hour ago.
Corrective Action(s): Always store these potentially hazardous food at 4C. Discussed addition of pearl to menu, please submit food safety plans for pearls.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Observed a container of ice stored in front handsink. Paper towel dispenser removed from front handsink.
Corrective Action(s): All handwash stations must be accessible so that nothing is stored inside. Hot, cold running water, soap and paper towel must be equipped at each station. Container of ice removed. Please reinstall paper towel dispenser by follow up inspection.

Observation (CORRECTED DURING INSPECTION): Two opened cans of oyster sauce were wrapped with syran wrap in the cooler. Scoop for ice was stored inside ice machine.
Corrective Action(s): Transfer oyster sauce into food grade containers. Do not reuse opened cans to store food. Ice scoop stored in seeparate container stored outside ice machine.

Observation (CORRECTED DURING INSPECTION): Observed newspapers being used to line two door cooler.
Corrective Action(s): Do not use newspaper to line shelving units as the surface is not cleanable. Newspaper removed.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Premises made renovations without health approval. Mop sink was removed and replaced with dishwasher. Operator informed that dirty mop water was being emptied into prep sink. Seating in dining area increased to 18.
Corrective Action(s): You must reinstall the mop sink as the prep sink is used to wash vegetables. Submit as built floor plans with proposal for reinstsallation of mop sink. Submit dishwasher specs. Reduce seating to 6 as per condition on permit.

Observation: Found crabs and a large bowl of dessert soup in the cooler. Staff informed it was from staff dinner yesterday.
