Followup inspection to Rpt # VCHN -AYZPS5: Tested pH of pepperoni and landjaeger products (both fermented): pH of pepperoni 5.17. pH of landjaeger 5.32. Operator pH meter and buffer solutions available for use. Ensure pH meter is calibrated once a month and pH records (target of 5.3) are available for review at all times.
