Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher was measured at 67 degrees C and approximately 10 ppm chlorine in the rinse residual at the utensil surface.
Corrective Action(s): Dishwasher was adjusted at the time of inspection and measured at approximately 50 ppm chlorine in the rinse residual. Ensure all equipment and utensils are properly washed and sanitized at all times. Resanitize equipment / utensils. Ensure dishwasher is operated and maintained as per manufacturer's specifications (minimum 50 ppm chlorine) and is capable of sanitizing equipment / utensils at all times. Use test strips to verify minimum chlorine concentration is being met.

Routine inspection conducted:

- Coolers at 4 degrees C or less*
- Freezers at -16 to -22 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Coolers equipped with thermometers. Probe thermometer on site.
- Food is properly organized (raw and ready-to-eat)
- Hand washing stations (front, back) are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Note: Paper towels were outside of roll dispenser for one hand sink. Paper towels were placed onto dispenser at time of inspection.
- Bleach water sanitizer available in labeled spray bottles (front, back) at 100 to 200 ppm chlorine
- General sanitation satisfactory. Ventilation canopy in clean condition.
- No signs of pest activity noted at time of inspection
- Permit posted at front
- FOODSAFE requirements met at time of inspection.
*Exception: Glass cooler at 5 degrees C at the time of inspection. Monitor and adjust as necessary to maintain foods at 4 degrees C or less.
