General sanitation - excellent.
- All freezers at -18 deg C or less.
- Small undercounter cooler (in the back room) - satisfactory (beverages in the cooler).
- Thermometers for cold units - available.
- Temp. logs - available.
- All food stored safely at the time of inspection.
- All hand sink supplied with hot/cold running water, liquid soap, and single use paper towels.
- Back room has handsink & 3 comp sink.
- Quat sanitizer - available.
- No signs of pests.
A sampling program:
-Premises samples food items (pre-cooked frozen meats/foods no raw products) as per all other M&M meat shops. No frying/cooking of foods that produce grease vapors as there is no fume hood. Sampling occurs Fri-Sunday. A hot holding unit is not in use at the time of inspection. Note: Ensure that it is capable of keeping foods at or >60 deg C. Currently, staff heat foods in only small amounts and bring them to the hot holding unit.
