Comments

All three handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Refrigeration units were at 4 degrees C or less.
Walk-in-freezer and other freezers were at -18 degrees C or less.
Refrigeration units were equipped with thermometers.
200 ppm QUATS sanitizer was available in the labelled spray bottle and in the second compartment sink unit.
2-compartment sink was supplied with hot and cold running water.
Dishwasher final rinse temperature was at least 71 degrees C (measured at 71.6 degrees C) at the plate level.
A cutting board was observed pre-soaked in 100 ppm chlorine sanitizer. Manager informed it will be subsequently washed and sanitized through the high temperature dishwasher prior to reuse.
Ice machine was in a clean condition.
No signs of pest activity were evident at the time of inspection.
Permit to operate was posted.
