Observation: High temperature dishwasher only reaching 64-67C when it must reach 71C at minimum. Not a high volume of dishes go through the dishwasher, a lot of equipment is clean in place or done by hand because its too large to fit in dishwasher.
Corrective Action(s): Adjust/repair dishwasher so that it can maintain 71C at all times. Due: Oct 18, 2023
Dishwasher may continue to be used but dishes must be manually sanitized by using spray sanitizer or submersing in sanitizer in sink.
Notify undersigned EHO when repair is complete.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Multiple large containers of frozen chicken thawing at room temperature in warehouse area. Staff stated they take the frozen blocks of chicken out of the box then move them to plastic containers at the start of the day then move them into the cooler at the end of the day to finish thawing.
Corrective Action(s): Thawing at room temperature like this can allow for bacteria to grow on the parts of the chicken that thaw the fastest (corners) while the center is still frozen. Staff stated that thawing in the cooler takes too long. Thawing can and must be done in a safer manner. Recommend the cold water bath method where the frozen chicken would be submersed in water (can also be done in a large plastic tub) which transfers the cold faster than air and in a safer manner.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Back bay door was up approximately 1 meter which is more than enough space for pests to enter with no one actively going in/out of this door. Staff stated that they just got a delivery.
Corrective Action(s): Ensure the doors are closed fully when not in use to prevent pest entry.
